At Le Rêve de Fusion by La Prévôté, our kitchen is a place where terroirs, techniques, and cultures meet. Guided by Chef Anuroopa Banerjee and Sous-Chef Zakariae Bendaou, our cuisine blends Indo-French creativity with the spirit of Provence. To complete the journey, Sommelier Stéphane Charvet curates a thoughtful selection of wines from the Rhône Valley, Provence, and beyond.

Chef de cuisine –Anuroopa Banerjee

A Culinary Explorer with Global Roots

Anuroopa Banerjee’s cuisine is shaped by travel, curiosity, and a dialogue between cultures. A graduate of the Italian Chef Academy in Rome, she refined her craft in acclaimed international kitchens, from Gaggan in Bangkok to Merito in Lima.

She later founded Journey in Lisbon, a bistronomic restaurant celebrated for its creativity, warmth, and loyal following, and widely featured in international media.

At La Prévôté – Le Rêve de Fusion, her cooking weaves Indian heritage and Mediterranean finesse, finding a natural harmony with the seasonal bounty of Provence.

Sous Chef -
Zakariae Bendaou

Precision, Passion, and a Drive for Gastronomy

 

Zakariae Bendaou has built his career step by step, guided by a deep passion for the craft of cooking and a clear ambition to grow within gastronomy. Trained across restaurants in L’Isle-sur-la-Sorgue and Provence, he developed strong technical foundations in both brasserie and semi-gastronomic kitchens.

From managing high-volume services to refining precision and consistency alongside chefs, Zakariae brings rigor, energy, and reliability to the kitchen. His experience spans fish and seafood, Provençal cuisine, and team leadership, always with a focus on product quality and execution.

At La Prévôté – Le Rêve de Fusion, he works alongside Chef Anuroopa Banerjee with a shared goal: to evolve, to push standards higher, and to contribute to a cuisine that seeks recognition through dedication, discipline, and passion.

Sommelier –
Stéphane Charvet

With over 20 years of experience in fine dining, Stéphane Charvet approaches wine pairing with both precision and poetry. His career has been shaped in renowned restaurants across France, where attention to balance, harmony, and emotion defines every pairing.

His cellar celebrates the Rhône Valley and Provence, enriched by carefully selected international wines, chosen to echo the spice-forward elegance and depth of our cuisine.
